Roasted Pork Tenderloin with Caramelized Onion and Balsamic Pear Sauce

2 lb pork loin

Salt and pepper

1 clove garlic, minced

2 onions, diced

3 pears, diced

2 Tbl balsamic vinegar

1 (14oz) can chicken broth

 Rub salt and pepper all over the pork loin. Place in a roasting pan along with the remaining ingredients. Roast loin in a 375 degree oven for aprox 35-40 minutes or until internal temperature is 150 degrees.

 Remove pork from tasting pan to serving platter. Depending on the remaining juices in the pan, add more chicken broth or water to desired consistency or reduce on stove until thickened. Taste and adjust seasoning with salt and pepper as needed.
