Dutch Oven Cornish Game Hens with Vegetables
4 Cornish game hens
1 onion, sliced or chopped
4 potatoes, cut into halves or thirds
1 lb baby carrots
1 green pepper, cut into chunks
8 oz mushrooms, sliced or whole
favorite seasoning salt or salt and pepper to taste
1. Remove hens from bags, rinse and remove inside pack of giblets.
2. Place onion, potatoes, carrots, green pepper and mushrooms randomly in dutch oven. Sprinkle with seasoning. Place hens on top of vegetables and sprinkle each with additional seasoning.
3. Cover dutch oven with lid and ring the outer edge of lid with hot briquets. Place dutch oven over a circle of hot briquets. This should create a 350 degree oven. Bake for 1 ½ hours. When meat is done remove to serving platter. Serves 4.
